For the Love of Dutch Babies
Seriously have you ever heard of a Durch Baby?? Could be - should be one of the best breakfast baked goods of all time. Read along I’ll share my passion for odd American baked goods and provide you with a recipe for how to make a Dutch Baby - no sex needed.
This lovely baked good has made its way into our family and supplanted the banana almond butter pancake as the preferred breakfast baked good we eat. It does help that you make it in a cast-iron skillet with the magical power of an oven.
The reasons I love the Dutch Baby are many:
The pastry is dense and light at the same time.
Made of mostly egg it is a great way to pack in some protein in the morning.
There is a bunch of beautiful butter included that helps to create a wonderful brown and crispy crust.
You get to use a cast-iron skillet!!
Not a lot of sugar included in the mix so you can dress them up or down depending on your diet.
Actually the reason our family fell in love with them is reason number 5. The pastry itself is all texture and low taste which means you get to pick how you want to dress up the baby. I prefer apple sauce. My wife loves cinnamon and sugar. Elouise is a jam kinda kid. We’ve even tried fried onions and bacon :) Really anything can be included to make the breakfast you want.

How To Make A Dutch Baby
What you’ll need
4 eggs
3 tbsp Butter
3/4 Cup All Purpose Flour - We use our favorite GF flour
3/4 Cup Milk - We use our favorite DF milk.
1 tbsp Sugar
2 tsp Vanilla
Pinch of Salt
Instructions
Preheat the oven to 450 degrees. Be sure to place the cast-iron skillet in the oven while it is preheating. Add the butter to the skillet midway to temp so the butter is completely melted but not burning when the oven reaches temp
Add the eggs, milk, flour, sugar, vanilla, and salt into a mixing bowl and mix well without whipping the eggs.
Once the oven is at temp and the butter fully melted pour the mix into the skillet and return to the oven quickly.
Bake for 25 minutes. Don’t peek! The Dutch Baby will rise up in the oven but too many peeks and the bake won’t go your way.
Once out of the oven the Dutch Baby will lay back down into a lovely little cake. Cut it up and serve with your preferred toppings.
